Kebab is Persian and can spelled kabab, kebap, kabob, kibob. It refers to a variety of barbecued/grilled/broiled meat dishes in Middle Eastern, Central Asian and South Asian cuisines. Kebabs usually consist of lamb and beef, though particular styles of kebab have chicken or fish. The word kabab is from Arabic or Persian but originally meant fried meat, not grilled meat.

Shish kebab
Shish kebab is a dish consisting of small cubes of meat threaded on a skewer that are grilled or roasted. Any kind of meat may be used, and fruit or vegetables are often placed on the skewer as well. Typical vegetables include eggplant, tomato, bell pepper, onion and mushrooms.

Doner kebab
Doner kebab, literally "rotating meat" in Turkish, is sliced lamb or chicken loaf which is slowly roasted on a vertical rotating spit. It is similar to gyros, shawarma, and Taco al pastor. Doner kebab is most popularly served in pita bread, as it is best known, with salad, but is also served in a dish with a salad and bread or French fries on the side, or used for Turkish pizzas called pide or "kebabpizza".

Kathi Kebab
Made with Indian Tandoor, this is one of the most famous Tandoori dish besides Tandoori Chicken which has made the Tandoori cuisine famous worldwide. Made with Beef, Chicken or Lamb meat mostly and prepared with a mix of mouthwatering spices, it is cooked inside the Tandoor with skewers. The radiant heat from the tandoor slowly cooks the meat and because there is no direct heat from the fire, the juices remain inside while adding flavour along with spices making it very tender and moist. Served with Basmati Rice pulav or Tandoori Nan or roomali roti along with onions and mint sauce, this type of Kebabs has been savoured by the people since ages.
